Chicken liver and gizzard: nutrition per 100 g

Per 100 g, raw chicken liver gives 124 kcal, 21.6 g protein, 9.92 mg iron and 1032 micrograms of folate, according to the Indian Food Composition Tables 2017. That folate figure ranks 1st of 197 foods in the tables, and the iron ranks 13th of 242. Liver also carries 3486 micrograms of retinol, more vitamin A than any other meat or egg listed.

About chicken liver and gizzard

Chicken liver is the cheapest organ meat in most Indian towns, often sold by the small bag at the same counter as broiler chicken, together with the gizzard, the bird's muscular grinding stomach. In Hyderabad and Mumbai it goes into kaleji masala; in Tamil Nadu it is kozhi eeral varuval, fried hard with pepper and curry leaves; in Kerala, kozhi karal roast. Many grandmothers kept it aside for a child who was pale or a woman recovering after childbirth.

IFCT 2017 gives the two organs separately, and they are quite different foods. Liver is the nutrient store of the bird, with 9.92 mg iron and very high vitamin A and folate. The gizzard is lean muscle: 92 kcal, 18.2 g protein, 2.1 g fat and 3.19 mg iron per 100 g. Gizzard needs long, slow cooking or pressure cooking to turn tender, while liver turns grainy and bitter if it is cooked too long.

    Most folate of any food listed

    At 1032 micrograms per 100 g, chicken liver ranks 1st for folate of all 197 foods with a value in IFCT 2017. That is several times the daily requirement: 344 per cent for a sedentary man and 469 per cent for a woman. Folate is needed to make new red blood cells.

    Iron in its most absorbable form

    Liver gives 9.92 mg of iron per 100 g, 1st of 14 in its group and 13th of 242 foods. That covers 52 per cent of a man's daily iron need and, because women need more iron, only 34 per cent of a woman's. Much of it is haem iron, which the body absorbs far better than iron from grains or greens.

    Very high in vitamin A

    Chicken liver carries 3486 micrograms of retinol per 100 g, the preformed vitamin A the body uses directly. No other meat, poultry or egg in IFCT 2017 comes close; even egg, the next highest, has only a small fraction of that.

    Protein and B vitamins

    With 21.6 g protein per 100 g, liver ranks 3rd of 14 in its group. It also meets 38 per cent of a man's vitamin B6 requirement, 25 per cent of his niacin and 16 per cent of his thiamine, and it leads its group for thiamine and selenium, at 46.4 micrograms.

How chicken liver and gizzard is eaten

  • Kaleji masala: liver and gizzard pieces tossed in onion, ginger, garlic and garam masala, cooked quickly so the liver stays soft.
  • Kozhi eeral varuval: Tamil-style liver fry with crushed black pepper, fennel and curry leaves.
  • Pressure-cook gizzards first, then add them to a dry pepper fry or a thick onion masala.
  • A spoonful of chopped cooked liver mixed into keema or egg bhurji adds iron without a strong liver taste.

Before you plan around it

Liver is very rich in preformed vitamin A, which the body stores rather than flushes out. Pregnant women are usually advised to keep liver to small, occasional portions because too much retinol can harm the developing baby; they should follow their doctor's advice. Liver also has 268 mg of cholesterol per 100 g, the 2nd highest of 253 foods in IFCT 2017, and organ meats are high in purines, so people with gout or high LDL should eat it rarely. Buy it fresh, keep it cold and cook it through.

Is chicken liver good for anaemia?

Chicken liver is one of the richest food sources of iron and folate in IFCT 2017, with 9.92 mg iron and 1032 micrograms folate per 100 g, and its haem iron is well absorbed. Anaemia has several causes, though, so it needs a blood test and a doctor's advice; food helps alongside treatment, not instead of it.

How much protein is in chicken gizzard?

IFCT 2017 lists 18.2 g of protein per 100 g of raw chicken gizzard, with only 92 kcal and 2.1 g of fat. That makes gizzard one of the leanest protein foods in the meat group, though it needs long cooking to become tender.

Can pregnant women eat chicken liver?

Usually only in small amounts and not often. Chicken liver has 3486 micrograms of retinol per 100 g, and very high retinol intake in pregnancy is linked to birth defects. Its iron and folate are valuable, but a pregnant woman should ask her doctor how much, if any, suits her.
