These figures are from the Indian Nutrient Databank (INDB), which calculates each dish from a standard recipe using Indian food composition data. They describe that recipe and that serving: a larger portion, or more oil, ghee or sugar, gives more. Source: Vijayakumar A, Dubasi HB, Awasthi A, Jaacks LM. Development of an Indian Food Composition Database. Current Developments in Nutrition. 2024;8(7):103790 (Indian Nutrient Databank, INDB).
What this figure covers
The figure is for one plate made to a standard recipe: 50 g of noodles, 60 g of broiler chicken, 50 g each of carrot and capsicum, 30 g each of cabbage and French beans, 25 g of spring onion and 5 teaspoons of oil. It is a balanced plate on paper, with more vegetables than noodles and a fair portion of chicken. Many takeaway plates reverse those proportions: a large mound of noodles, a few strips of chicken and cabbage, and enough oil to make the box shine. A plate like that should be assumed to be above 521 kcal.
Fat supplies 49% of the energy, carbohydrate 35% and protein 17%. Fat is the largest contributor, and most of it is the 5 teaspoons of oil, at about 44 kcal each. The chicken is what separates this plate from the vegetable version: 21.8 g of protein against 9.2 g. With 5.7 g of fibre from the vegetables as well, this is one of the few street-style dishes that covers starch, protein and vegetables in one plate. Its cost is the oil and the salt.
What goes into one serving
The recipe INDB analysed makes 1 plate. These are its main ingredients; spices, salt and water are left out.
| Ingredient | In the recipe | In 1 plate of chicken chowmein |
|---|---|---|
| Cabbage | 30 g | 30 g |
| Capsicum | 50 g | 50 g |
| French beans | 30 g | 30 g |
| Carrot | 50 g | 50 g |
| Chicken (broiler) | 60 g | 60 g |
| Noodles | 50 g | 50 g |
| Spring onion | 25 g | 25 g |
| Oil | 5 tsp | 5 tsp |
What changes the number
- 01
Oil for the chicken and the noodles
The recipe uses 5 teaspoons of oil in a plate. Kitchens that fry the chicken separately before tossing it with the noodles use more. One further teaspoon takes the plate to about 565 kcal.
- 02
The cut of chicken
The figure assumes 60 g of broiler chicken. Skinless breast is the leanest; thigh, skin-on pieces or chicken that has been battered and deep-fried first bring more fat.
- 03
Noodles on the plate
There are 50 g of noodles in the reference plate. A bigger helping raises the carbohydrate and the calories directly, and most outside servings are bigger.
- 04
Sauces and seasoning
Soy sauce, chilli sauce, vinegar and seasoning powders make chowmein salty. An extra ladle of sauce adds a good deal more salt to the plate while barely changing the calories.

| Vegetable Chowmein | 1 plate of vegetable chowmein | 389 | 9.2 |
| Paneer Kathi Roll | 1 paneer kathi roll | 424 | 10.3 |
| Chicken Chowmein | 1 plate of chicken chowmein | 521 | 21.8 |
In a meal and in a day
This is a full meal. One plate is about 25% of a sedentary man's daily energy requirement and 31% of a woman's, and with 21.8 g of protein it does not need anything beside it. Soup, momos or a soft drink ordered alongside add to an already large total. Half a plate comes to about 260 kcal, a reasonable share if the dish is one of several on the table. Two plates would be 1,042 kcal.
Ways to keep it lighter
- Cook it at home with two or three teaspoons of oil in a non-stick pan or a well-seasoned wok.
- Use skinless chicken breast and stir-fry it; do not batter or deep-fry it first.
- Keep the vegetables at least as generous as the recipe's, and do not add extra noodles.
- Add sauces by the teaspoon and taste before salting.
- Split a restaurant plate between two people and add a clear soup or a salad.
Before you rely on the number
This is a salty dish: sauces, seasoning powders and added salt all contribute, and a restaurant plate may contain more of each. The other thing to weigh is the 28.4 g of fat, most of it cooking oil and only a small part from the chicken. People who have been told by a doctor or dietitian to limit salt or fat, for blood pressure, kidney disease or a heart condition, should follow that advice and keep outside chowmein for occasional meals.
Food composition is general information, not a diet plan. Anyone managing a medical condition should plan their diet with a doctor or a registered dietitian.
