Kuttu, singhara and rajgira share a dabba every Navratri, yet they come from three unrelated plants. Two are genuinely nutritious seeds, one is mostly starch, and the flour behind most vrat food-poisoning headlines is usually kuttu.

Kuttu, Singhara or Rajgira Atta? Vrat Flours Compared on Nutrition

In most north Indian kitchens the vrat flours come out of the same steel dabba every Navratri and end up in the same puris. Nutritionally they are not the same thing at all. Kuttu is ground from buckwheat seeds, singhara from dried water chestnuts, and rajgira from the tiny seeds of amaranth, three plants from three unrelated families. Their protein, fibre, minerals and even their safety risks differ, and the way you cook them shifts the picture again.

The figures below are per 100 g of flour, drawn from the Indian Food Composition Tables (IFCT 2017) and international food tables. Values move with variety, milling and moisture, so read them as ranges rather than label promises.

What is kuttu atta made from?

Kuttu atta is ground buckwheat, the triangular seed of Fagopyrum esculentum, a plant related to rhubarb and sorrel rather than to wheat. Because it is a seed and not a cereal grass, it counts as a pseudocereal and is allowed on most vrats. The flour is grey-brown with an earthy, faintly bitter taste. Per 100 g it carries roughly 10 to 13 g of protein, 7 to 10 g of fibre and a good amount of magnesium, for about 340 kcal. Buckwheat also contains rutin, a flavonoid studied for its effects on blood vessels, though the amount in a few puris is modest. It is grown in the Himalayan states, where it is eaten well beyond festival days.

What is singhara atta made from?

Singhara atta is milled from the dried kernel of the water chestnut, Trapa, a floating plant grown in ponds across Bihar, Uttar Pradesh, Madhya Pradesh and Kashmir. The fresh nuts sold from winter carts are crisp and watery; drying concentrates them into a pale, mild, slightly sweet flour. Starch dominates, at around 70 g of carbohydrate per 100 g of dried flour, and fibre is generally reported as low. Protein is where the tables disagree most: published analyses of dried water chestnut flour range from about 4 to 12 g per 100 g, depending on the variety, how it was dried and whether the husk was fully removed. Treat any single protein number on a pack with caution.

Where does rajgira atta come from?

Rajgira is amaranth, the seed of Amaranthus plants whose leaves also turn up as chaulai saag. The name is often read as raj-gira, the royal grain, and the seeds are so small that a spoonful holds thousands of them. Like buckwheat it is a pseudocereal. Per 100 g the flour carries roughly 13 to 14 g of protein, about 7 g of fibre, 6 to 7 g of fat and about 370 kcal. Its protein is unusually rich in lysine, the amino acid that wheat and rice run short of, and it contains calcium and iron in amounts that stand out among vrat foods. Popped rajgira, sold as ladoos and chikki, is the same seed puffed with dry heat.

Why these flours are allowed when grains are not

Most Hindu vrat traditions set aside anaaj, the cereal grains such as wheat, rice and maize, along with pulses in many households, and allow foods regarded as phalahar: fruits, roots, milk and a handful of seeds that are not true grains. Buckwheat, amaranth and water chestnut all sit outside the cereal family, so they qualify, as do sabudana, potatoes, arbi and samak rice, the barnyard millet whose status varies by family. Rock salt replaces ordinary salt. The logic is ritual and sattvic rather than nutritional, and it has an interesting side effect: the permitted list happens to include two of the most protein-rich flours in the Indian kitchen.

Which vrat flour has the most protein?

Rajgira has the most, at roughly 13 to 14 g per 100 g, with kuttu close behind at 10 to 13 g. Both beat whole wheat atta, which sits around 12 g, and both clearly beat sabudana, which has under 1 g. Singhara is the uncertain one, anywhere from 4 to 12 g depending on the analysis. Quality matters as well as quantity. Amaranth and buckwheat proteins both carry more lysine than cereal proteins, so a rajgira or kuttu roti with curd gives a better amino acid mix than a wheat roti would. On a fast where dal is off the menu, that difference is genuinely useful, especially over nine days.

Which vrat flour has the most fibre?

Kuttu usually leads, at about 7 to 10 g per 100 g, with rajgira around 7 g and singhara lower. Fibre matters more on a fast than on an ordinary day, because vrat meals tend to lean on starch and sugar: sabudana, potatoes, sweetened milk and fruit. Fibre slows how quickly that starch reaches the blood, keeps you full for longer between the one or two meals many people eat, and eases the constipation that often follows a week of phalahar with little vegetable. The practical point is that a kuttu or rajgira roti does more for fullness than a singhara puri of the same size.

Is kuttu atta good for diabetes?

It is one of the better vrat choices for blood glucose, though not a treatment. A 2018 meta-analysis by Li, Lietz and Seal pooled 13 randomised trials, most from China, and found that eating buckwheat lowered blood glucose by an average of 0.85 mmol/L, roughly 15 mg/dL, with modest falls in total cholesterol and triglycerides. The studies varied a great deal, and the authors could not say which products or amounts produced the effect. A Slovenian study measured a glycaemic index of 61 for boiled buckwheat groats against white wheat bread, with lower glucose and insulin responses and higher fullness. Is rajgira a good source of calcium and iron?

Yes, by the standards of plant foods. Food tables put rajgira at about 150 to 160 mg of calcium and about 7 mg of iron per 100 g, well above wheat or rice. A rajgira roti made from 40 g of flour therefore supplies around 60 mg of calcium, a small but real share of the daily need. Two caveats apply. Amaranth contains oxalate and phytate, which bind part of those minerals, so less is absorbed than the label figure suggests. What singhara atta is good for

Singhara earns its place in the kitchen for texture and taste rather than nutrients. Its starch binds well, so it holds kuttu and rajgira dough together, thickens a vrat kadhi and makes a smooth, soft halwa. Its mild sweetness suits children and older family members who find kuttu bitter. For a person who needs easy calories during an illness, or who struggles with the heavier seed flours, it is a gentle option. For someone trying to stay full, manage weight or keep blood sugar steady, it works best as the minor partner in a mixed flour rather than the main flour of the meal.

Are kuttu, singhara and rajgira gluten free?

All three are naturally free of gluten, but a pack is only safe for coeliac disease if it says gluten free. Many chakkis and small mills grind wheat on the same stones, and some packaged vrat flours are blended or bulked. People with coeliac disease react to very small amounts, so cross-contact matters as much as the plant. The same absence of gluten is why these flours crumble: there is no elastic network to hold a roti together, which is why families add boiled potato or arbi. Why does kuttu atta make people ill during Navratri?

Most seasons bring news reports of groups of people falling sick after eating kuttu atta puris or pakoras, usually traced by local authorities to old, rancid, spoiled or adulterated flour rather than to buckwheat itself. Kuttu atta is sold in bulk for a few weeks a year, often loose and sometimes carried over from the previous season, and its oils go rancid while damp stock can grow moulds. Adulteration with cheaper flours has also been reported. Buckwheat allergy is a separate, rarer problem that can be severe. Vomiting, dizziness or diarrhoea within hours of a vrat meal, especially in children or older people, needs a doctor promptly.

Puri, roti, chilla or halwa: the cooking sets the calories

The flour matters less than what happens next. A kuttu puri soaks up oil in the kadhai, and the same 30 g of flour that makes a roti of about 100 kcal can become a puri of 150 kcal or more, depending on size and oil temperature. Pakoras made from kuttu or singhara batter behave the same way. Rajgira halwa and singhara halwa are ghee and sugar with flour in them. A chilla on a tawa, a thick roti, or rajgira cooked as porridge with milk keeps most of the flour's advantage. Choosing between kuttu and singhara saves less than choosing the tawa over the kadhai.

How do you make a vrat roti that does not break?

Mix the flours and add a binder. Equal parts rajgira and kuttu give protein and fibre, and a smaller share of singhara helps the dough cling. Mash in one small boiled potato or arbi for each katori of flour, knead with warm water, and rest the dough for 10 minutes so the starch hydrates. Roll it thicker than a wheat roti, or pat it by hand between sheets of plastic, and cook on a medium tawa with a few drops of ghee. Serve it with curd, paneer or a cucumber and peanut raita, so the meal is not starch alongside more starch.

A softer vrat roti from mixed flours

  1. Start with rajgira and kuttu

    Mix the two in equal parts for protein and fibre, then add a smaller share of singhara so the dough holds together.

  2. Bind with potato or arbi

    Mash one small boiled potato or arbi into each katori of flour. It stands in for the gluten these flours lack.

  3. Knead warm and rest

    Use warm water, knead briefly and leave the dough for 10 minutes so the starch softens evenly.

  4. Cook on the tawa

    Roll or pat it slightly thick and roast with a few drops of ghee. The tawa uses a fraction of the oil a puri takes up.

  5. Add protein to the plate

    Serve with curd, paneer or a cucumber and peanut raita rather than aloo sabzi alone.
