Tomato Rice

Tomato rice, thakkali sadam in Tamil, is cooked rice folded into a thick base of tomatoes sauteed with a mustard seed tempering, onion and ground spices. Unlike a pulao it uses already-cooked rice, and the tomatoes must be reduced to a thick masala before the rice goes in or the result turns soggy.

Ingredients

  • 3 cups cooked rice, cooled
  • 4 large ripe tomatoes, finely chopped
  • 1 onion, finely sliced
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 tablespoon chana dal
  • 10 curry leaves
  • 1 teaspoon ginger garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon sambar powder or red chilli powder
  • 2 tablespoons chopped coriander leaves
  • Salt to taste

Tomatoes cooked in oil are one of the better everyday sources of lycopene, and cooking actually increases how much of it the body can absorb, while the fat in the pan improves that further. The dish is still rice led, so the protein is low, which is why it is best sent out with curd or a boiled egg. For children it works well because the flavour is mild and the colour is appealing.

Method

    Spread the cooked rice on a plate to cool completely so the grains separate.

    Heat the oil, pop the mustard seeds, then fry the chana dal until golden and add the curry leaves.

    Add the sliced onion and fry for 5 minutes until soft and lightly coloured.

    Add the ginger garlic paste and cook for a minute, then add the chopped tomatoes with salt.

    Cook the tomatoes down for 10 to 12 minutes on a medium flame until they collapse completely and the mixture thickens to a jammy paste with oil at the edges. This is the step that decides the dish.

    Stir in the turmeric and sambar powder and cook for 2 minutes more.

    Fold in the cooled rice gently until evenly coated, then finish with coriander leaves off the heat.

Why do the tomatoes need to be cooked down so far?

Because tomatoes are more than nine tenths water, and any water left in the pan goes straight into the rice. Ten to twelve minutes on a medium flame reduces four large tomatoes to a thick paste with visible oil at the edges, and that concentration is where the flavour is. Cooks who add rice to a loose, watery tomato mixture end up with something closer to a wet khichdi, and no amount of extra cooking afterwards recovers it.

Does cooking destroy the goodness in tomatoes?

Not for lycopene, which is the compound tomatoes are most valued for. Heat breaks down the cell walls that trap it and converts it to a form the body absorbs more readily, so cooked tomato delivers more usable lycopene than raw. Because lycopene is fat soluble, cooking it in oil improves absorption further. Vitamin C does degrade with heat, so raw tomato is better for that, but this dish is a genuinely good way to eat tomatoes.

Should the rice be freshly cooked or cooled?

Cooled, for the same reason as lemon rice. Warm grains are soft and sticky, and folding a thick masala through them crushes them into a paste. Rice cooked an hour or more ahead, spread on a plate, firms up and separates. This makes tomato rice a natural way to use leftovers rather than a dish you plan a fresh pot of rice for.

What is the difference between tomato rice and tomato pulao?

The order of operations, and it produces genuinely different food. Tomato rice folds cooled cooked rice into a finished tomato masala, so the grains stay distinct and coated. Tomato pulao cooks raw rice in tomato and water together, so the grains absorb the liquid and swell, giving a softer, more uniform result. The South Indian dish is the first; the North Indian version is usually the second.

Is it suitable for a child's lunchbox?

It is one of the better options. The flavour is mild if you keep the chilli low, it holds its colour and taste for several hours at room temperature, and it does not need reheating. What it lacks is protein, so it should not go alone. A boiled egg, a small container of curd, or a handful of roasted peanuts alongside turns it into a balanced meal rather than a box of rice. Which rice works best?

Ordinary short or medium grain rice, not basmati. This is a homely dish and the fragrance of basmati fights the tomato and curry leaf rather than complementing them. Sona masuri is the usual choice in the south and holds its shape well when folded. Whatever you use, it should be cooked slightly firm, since a soft grain will not survive being mixed with a thick masala.

How do you stop it turning sour?

Use ripe tomatoes and cook them properly. Underripe tomatoes are high in acid and low in the sugars that balance it, and undercooking leaves that acidity sharp. If your tomatoes are on the sour side, a quarter teaspoon of sugar or a tablespoon of grated coconut folded in at the end rounds it out. A small piece of jaggery is the traditional correction in Tamil households.

Why is my tomato rice soggy?

The tomato base was not reduced enough before the rice went in. Tomatoes are over ninety per cent water, and that water transfers straight to the grains. Cook the chopped tomatoes for ten to twelve minutes until they collapse into a thick paste with oil separating at the edges, then fold in cooled rice.

Can I use basmati rice for tomato rice?

You can, but ordinary short or medium grain rice such as sona masuri suits it better. Basmati's fragrance competes with the curry leaf and tomato rather than complementing them, and its long grains break more easily when folded into a thick masala. Cook whatever rice you use slightly firm.

Is tomato rice healthy?
