Paneer Paratha

Paneer paratha is wholewheat flatbread stuffed with grated, spiced paneer and cooked on a tawa. It is the highest-protein of the common stuffed parathas, and its one technical problem is that salted paneer releases whey, so the filling must be seasoned at the last moment rather than mixed ahead.

Ingredients

  • 2 cups wholewheat flour
  • 200 g paneer, grated
  • 1 green chilli, very finely chopped
  • 1 inch ginger, grated
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon black pepper, freshly ground
  • 3 tablespoons chopped coriander leaves
  • 3 tablespoons ghee, for cooking
  • Salt, to add at the last moment

This is the stuffed paratha worth eating if protein matters to you. Paneer carries roughly 18 grams of protein per 100 grams, so a paratha stuffed with 50 grams of it delivers meaningfully more than an aloo paratha, which is starch inside starch. The protein also slows gastric emptying, which is why people stay full longer after this than after a potato filling of the same calorie count.

Method

    Knead the flour with water into a soft dough and rest it covered for 20 minutes.

    Grate the paneer on the fine side of a box grater. Fine grating means no lumps to push through the dough while rolling.

    Mix the grated paneer with the chilli, ginger, carom seeds, garam masala, pepper and coriander, but leave the salt out for now.

    Divide the dough and the filling into equal portions and set up your rolling area before you season.

    Add the salt to the filling and mix quickly. From this point you have a few minutes before the paneer starts weeping.

    Stuff each dough ball, sealing the edges completely, then roll gently from the centre outward with light, even pressure.

    Cook on a hot tawa for a minute a side, brush with ghee, and press the edges with a spatula until golden brown spots appear.

Why must the salt go in at the last minute?

Because salt draws water out of paneer by osmosis, and within about ten minutes a seasoned filling sits in a pool of whey. That liquid is what makes the paratha tear and stick. Mixing everything except the salt, setting up your workspace, and then salting immediately before stuffing gives you a dry filling for the few minutes you actually need it. This single change fixes most paneer paratha problems.

Should the paneer be grated or crumbled?

Grated, on the fine side of the box grater. Crumbled paneer leaves lumps, and every lump is a point where the dough has to stretch further than the rest, which is where it splits. Fine grating also distributes the spices evenly through the filling instead of leaving pockets. If your paneer is very firm, grating it straight from the refrigerator is easier than at room temperature.

What does carom seed do here?

It cuts the richness and it helps digestion, which is why it appears in almost every Indian stuffed bread. Ajwain contains thymol, which gives it that sharp, thyme-like pungency and has a long traditional use for bloating and heaviness after fatty food. In a paratha built on dairy fat and wheat, both of which sit heavily for some people, it earns its place beyond flavour.

Is paneer paratha better than aloo paratha?

Nutritionally, clearly. An aloo paratha is wheat wrapped around potato, which is carbohydrate wrapped around carbohydrate, with almost no protein to slow it down. A paneer paratha puts around nine grams of protein in the filling of each one. That changes both the satiety and the blood glucose response of the meal. If you eat parathas for breakfast regularly, swapping to paneer is one of the more effective single changes available. Aloo paratha remains the better-loved dish; it is simply not the better breakfast.

Can you use shop-bought paneer?

Yes, and for this dish firm vacuum-packed paneer is actually easier to work with than very fresh soft paneer, because it holds less free moisture and grates cleanly. The usual objection to packaged paneer, that it turns rubbery, applies to curries where it is simmered, not to a filling that is only warmed through. Fresh paneer gives a softer, milkier filling if you have it.

What should be served with it?

Curd, pickle and butter, in the standard Punjabi arrangement, or simply curd if you are keeping it light. Because the paratha already carries its own protein, it needs less support than an aloo paratha does. A glass of sweet lassi is traditional but adds a considerable quantity of sugar, so plain curd is the better everyday choice.

How do you keep them soft?

Stack them as they come off the tawa, covered with a cloth, in a closed container. The steam they give off keeps them pliable; left uncovered on a plate they stiffen within minutes. Do not stack them in foil while very hot, which traps too much moisture and makes them soggy. A cloth-lined casserole is the traditional solution and is genuinely better than any modern alternative.

What people ask about Paneer Paratha

Why does my paneer paratha leak while rolling?

The salt was added too early. Salt pulls whey out of paneer within minutes, and that liquid is what breaks the dough. Mix everything except the salt, prepare your rolling station, then salt the filling and stuff immediately. Grating the paneer finely rather than crumbling it also removes the lumps that cause tears.

Is paneer paratha good for weight loss?

Better than most parathas, because the filling supplies real protein that slows digestion and keeps you full longer. It is still a wheat and dairy-fat meal, so portion matters, but one paneer paratha with curd is a far more satisfying breakfast per calorie than two aloo parathas.

Can I use frozen paneer for paratha?

Yes. Thaw it fully, pat it dry, and grate it. Frozen paneer often turns slightly crumbly, which matters in a curry but not at all in a filling that gets grated anyway. If it seems dry, a tablespoon of curd mixed in restores the texture without adding much moisture.

How much protein is in a paneer paratha?

Roughly nine to ten grams per paratha if you use fifty grams of paneer in the filling, coming mostly from the cheese with a little from the wheat. That is several times what an aloo paratha delivers, which is the main reason to choose it if breakfast protein is a priority.
