Aloo Paratha

Aloo paratha is wholewheat flatbread stuffed with spiced mashed potato and cooked on a tawa with ghee. The technique problem is always the same: wet filling tears the dough. Boiling the potatoes ahead, cooling them completely and grating rather than mashing is what makes a paratha that rolls without bursting.

Ingredients

  • 2 cups wholewheat flour, plus more for dusting
  • 3 medium potatoes, boiled the day before and cooled
  • 1 onion, very finely chopped, optional
  • 2 green chillies, finely chopped
  • 1 inch ginger, grated
  • 1 teaspoon amchur (dry mango powder)
  • 1/2 teaspoon garam masala and 1/2 teaspoon red chilli powder
  • 3 tablespoons chopped coriander leaves
  • 3 tablespoons ghee, for cooking
  • Salt to taste

As usually eaten, this is a carbohydrate-heavy breakfast: wheat outside, potato inside, ghee on top, and very little protein. That is why it is traditionally served with curd rather than alone, which adds protein and slows digestion. Adding grated paneer or crumbled cottage cheese to the filling, or a bowl of dal alongside, changes the balance considerably without changing what the dish is.

Method

    Knead the flour with water and a pinch of salt into a soft, pliable dough. Rest it covered for at least 20 minutes so the gluten relaxes and it rolls without springing back.

    Grate the cold boiled potatoes rather than mashing them. Grating keeps the filling light and releases far less moisture.

    Mix the grated potato with the chillies, ginger, amchur, garam masala, chilli powder, coriander and salt. Add the onion only if you will cook immediately, as it releases water quickly.

    Divide dough and filling into equal balls, keeping the filling ball slightly smaller than the dough ball.

    Flatten a dough ball, place the filling in the centre, gather the edges up over it and pinch to seal completely, then flatten the sealed ball gently with your palm.

    Roll out slowly with light, even pressure from the centre outward. Heavy pressure in one place is what pushes filling through the dough.

    Cook on a hot tawa for about a minute a side, then brush with ghee and press the edges down with a spatula until both sides have brown spots.

Why does the filling have to be dry?

Because moisture inside the dough turns to steam and finds the weakest point, which is wherever the dough is thinnest. Freshly boiled potato holds a great deal of water, and mashing it while warm releases still more. Boiling the potatoes a day ahead and refrigerating them lets that moisture redistribute and the starch retrograde slightly, giving a drier, firmer flesh. Grating the cold potato rather than mashing it keeps it that way.

Should the onion go in the filling?

Only if you are cooking straight away. Raw chopped onion draws water out through osmosis within about fifteen minutes of being salted, and that water is exactly what you have worked to avoid. Many Punjabi households leave it out entirely for this reason. If you want the flavour and need to prepare ahead, add the onion just before stuffing rather than when you mix the filling.

How do you roll without tearing?

Slowly, with light pressure, and turning the paratha frequently. The instinct is to press harder to make it larger, but pressure concentrated in one place pushes the filling sideways until it breaks through. Roll from the centre outward, rotate a quarter turn, and repeat. If a small tear appears, patch it with a pinch of dry flour rather than a piece of dough, which would leave a thick lump.

What is amchur doing there?

Providing the sourness that stops the filling tasting flat. Potato is bland and starchy, and a stuffing of potato, salt and chilli alone is dull. Dry mango powder adds acidity without adding liquid, which is why it is preferred over lemon juice in a stuffing that must stay dry. Pomegranate seed powder, anardana, does the same job and is traditional in some regions.

Is aloo paratha a healthy breakfast?

As usually eaten, it is heavy on carbohydrate and light on protein: wheat, potato and ghee with very little else. That does not make it bad, but it does explain why people often feel sluggish afterwards and hungry again sooner than the calorie count suggests. The traditional accompaniment of curd is doing real nutritional work by adding protein and fat. A bowl of dal alongside, or grated paneer worked into the filling, changes the profile substantially.

How much ghee does it actually need?

About half a teaspoon a side is enough to get a crisp, spotted surface. Restaurant and dhaba versions use far more, sometimes shallow-frying the paratha, and that is where most of the energy in a plate of aloo parathas comes from. The bread itself is not the problem. If you are watching intake, cook them on a well-seasoned tawa with a brushed film of ghee rather than a spoonful poured on.

Can they be made ahead or frozen?

Yes, and they freeze well, which is unusual for stuffed breads. Cook them until just done but not deeply browned, cool completely, stack with parchment between them and freeze. Reheat straight from frozen on a hot tawa. The filling is what suffers with refrigeration alone, going watery after a day, so freezing is better than keeping them in the fridge.

Why does my aloo paratha tear while rolling?
