Jeera Rice
Jeera rice is basmati cooked with cumin seeds bloomed in ghee, and nothing else beyond salt and perhaps a bay leaf. Its purpose is to carry a rich curry without competing with it. The technique is entirely about grain separation, which depends on soaking the rice, rinsing off surface starch, and getting the water ratio right.

- 2 teaspoons cumin seeds
- 2 tablespoons ghee
- 1 bay leaf
- 2 cloves and 1 small piece of cinnamon, optional

This is plain white rice with a small quantity of fat, so it is a source of quickly digested carbohydrate rather than a nutritionally rich dish in its own right. That is not a criticism: its job is to accompany something protein dense. Cooking rice and cooling it before reheating meaningfully increases its resistant starch, which lowers the glycaemic response, so leftover jeera rice is gentler on blood glucose than freshly cooked.
Method

Rinse the rice in several changes of water until the water runs almost clear. This removes loose surface starch, which is what makes grains stick.

Soak the rinsed rice for 30 minutes, then drain it thoroughly for 10 minutes in a sieve.

Heat the ghee in a heavy pan, add the bay leaf and the cumin seeds, and wait for the cumin to darken slightly and smell toasted, about 30 seconds.

Add the drained rice and toss gently for 2 minutes so every grain is coated in ghee. Use a flat spoon and fold rather than stir, since soaked grains break easily.

Add the water and salt, bring to a full boil, then cover and lower the flame to its minimum.

Cook undisturbed for 12 minutes. Do not lift the lid, which releases the steam that is doing the work.

Rest off the heat for 10 minutes with the lid on, then fluff with a fork from the edges inward.

Why does rinsing matter so much?
Because milled rice carries loose starch on its surface, and that starch gelatinises into glue the moment it meets hot water. Rinsing until the water runs almost clear takes about four changes and removes most of it. Skipping this step is the single most common reason home-cooked basmati clumps. Rinsing does wash away a small amount of surface nutrient in fortified rice, but for basmati the trade is entirely worth it.
What is the right water ratio?
One and a half cups of water to one cup of rice, if the rice has been soaked and drained. Unsoaked rice needs closer to one and three quarter cups. This is where most written recipes go wrong, because they give a single ratio without saying whether the rice was soaked, and soaked grains have already absorbed a considerable amount of water. Aged basmati also drinks slightly more than new-crop rice.
Why soak basmati at all?
To let the grain hydrate evenly before it meets heat, which allows it to expand lengthways rather than swelling and splitting. That elongation is the characteristic of good basmati and the reason it is worth buying. Thirty minutes is sufficient; several hours makes the grains fragile and prone to breaking when you fold them in the ghee. Draining properly afterwards matters as much as the soak.
When should the cumin be added?
Into hot ghee, before the rice, and for no more than about thirty seconds. Cumin seeds carry their aroma in volatile oils that are released by heat and destroyed by too much of it. You are waiting for the colour to deepen slightly and the smell to turn nutty. Black, acrid cumin has passed that point and will make the whole pot bitter, and there is no way to correct it.
Why should you not stir rice while it cooks?
Because stirring breaks grains and releases starch, which is exactly what you spent the rinsing step avoiding. Once the water is in and the lid is on, the rice should be left completely alone for twelve minutes and then rested for ten more. The resting period lets the moisture distribute evenly from the wetter bottom to the drier top. Fluff only at the very end, with a fork, from the edges inward.
What should jeera rice be served with?
Anything with a substantial gravy. It exists to be a neutral, aromatic carrier, which makes it the right partner for dal makhani, a rich paneer curry or a meat dish. It is the wrong partner for a dry sabzi, which needs roti instead. Pairing it with another highly spiced rice dish, or serving it alongside biryani, wastes what it is for.
Is white rice a problem for blood sugar?
Polished white rice does digest quickly and raises blood glucose faster than most whole grains, which matters for anyone with diabetes or insulin resistance. Two things soften that in practice. Eating it with protein, fat and fibre, which is exactly what a curry provides, slows the whole meal down. And cooking rice then cooling it fully before reheating converts some starch into resistant starch, which the small intestine does not absorb. Neither turns white rice into a whole grain, but portion and pairing do most of the work.
