Aloo Tikki
Aloo tikki is a spiced potato patty shallow fried until a hard golden crust forms. The two things that decide it are moisture, which must be driven out of the potato before shaping, and patience in the pan: a tikki flipped early will not have a crust and will fall apart.

Ingredients
- 4 medium potatoes, boiled the day before and cooled
- 2 tablespoons poha (flattened rice), soaked briefly and squeezed
- 1 teaspoon ginger green chilli paste
- 1 teaspoon coriander seeds, coarsely crushed
- 1 teaspoon amchur and 1/2 teaspoon garam masala
- 1/4 teaspoon black pepper
- 3 tablespoons chopped coriander leaves
- 3 tablespoons oil, for shallow frying
- Salt to taste

Potato is not the problem people assume; it supplies potassium, vitamin C and fibre, particularly with the skin. What changes a tikki nutritionally is the cooking fat and what it is served with. Shallow fried in two tablespoons of oil and eaten with curd rather than deep fried and topped with sev and sweet chutney, it is a reasonable snack. Adding boiled peas or crumbled paneer to the mixture raises the protein meaningfully.
Method

Grate the cold boiled potatoes rather than mashing them. Cold, grated potato holds far less free water.

Soak the poha for a minute, squeeze it dry and crumble it into the potato. It binds better than cornflour and leaves no gluey texture.

Mix in the ginger chilli paste, crushed coriander seeds, amchur, garam masala, pepper, coriander leaves and salt.

Shape into thick patties, about two centimetres deep, and rest them in the refrigerator for 20 minutes so they firm up.

Heat the oil in a heavy pan on a medium flame and place the tikkis in without crowding.

Cook undisturbed for 5 to 6 minutes. Do not move or press them. The crust forms in this time and flipping early destroys it.

Flip once and cook the second side for 5 minutes until equally golden and hard.

Why is poha a better binder than cornflour?
Because it absorbs water without adding a starchy, gluey layer. Soaked and squeezed flattened rice takes up the free moisture in the potato and disappears into the mixture, leaving the texture light. Cornflour and breadcrumbs both bind but leave a distinct pasty quality, and cornflour in particular can make the interior slightly rubbery. Bread soaked and squeezed is a reasonable alternative if you have no poha.
Why must the potatoes be cold?
For the same reason as in every other potato dish here: warm potato releases far more water, and water is what makes tikkis fall apart in the pan. Boiling them a day ahead and refrigerating also lets some starch retrograde, giving a firmer, drier flesh that grates cleanly. This single change fixes most binding problems without any additional binder.
Why should the tikki not be moved while frying?
Because the crust needs uninterrupted contact with the hot pan to form. A tikki that is nudged, pressed or flipped early has a soft, partly set surface that tears, and once torn it will keep releasing moisture and never brown properly. Five or six minutes on a medium flame, completely untouched, produces a hard golden shell that then holds the patty together for the flip.
Shallow fry or deep fry?
Shallow, for a home tikki. Deep frying gives an even all-round crust and is what street vendors do on a large tawa with a generous pool of oil, but it uses several times as much fat for a marginal difference. Two or three tablespoons in a heavy pan produces a genuinely crisp result if you leave the tikkis alone. An air fryer gives a drier, less satisfying crust because there is no fat contact.
What is the difference between aloo tikki and a cutlet?
Coating and composition. An aloo tikki is a bare potato patty, shallow fried with no crumb. A cutlet is usually a mixed vegetable or minced filling, dipped in batter or egg and coated in breadcrumbs before frying, which gives a completely different crust. Tikki chaat is the tikki served with chutneys, curd and sev; a cutlet is eaten as it is with sauce.
How do you make it more substantial?
Half a cup of boiled and crushed green peas, or crumbled paneer, worked into the mixture. Both add protein to a snack that has almost none, and peas add fibre as well. A tikki stuffed rather than mixed, with a spiced chana dal or paneer filling sealed inside, is the more elaborate Delhi version and worth the extra step. Neither addition affects the binding if the potato is dry.
What should be served with it?
Green coriander chutney and curd for an everyday snack, or the full chaat treatment with tamarind chutney, curd, chopped onion, sev and chaat masala. The curd is doing real work in both cases, adding protein and cutting the starch. As a plate of tikki chaat with generous sweet chutney and sev it becomes a substantial and quite sugary dish, so the two versions are not nutritionally comparable.

Why do my aloo tikkis fall apart?
Too much moisture in the potato, or you moved them too early in the pan. Boil the potatoes a day ahead, cool them fully and grate rather than mash. Then leave the tikkis completely undisturbed for five or six minutes so a hard crust forms before you attempt to flip them.
What can I use to bind aloo tikki?
Soaked and squeezed poha is the best option, because it absorbs the free water without leaving a starchy texture. Cornflour and breadcrumbs both work but can make the inside pasty or slightly rubbery. Squeezed bread is a reasonable substitute. Dry potato needs very little binder in the first place.
Can aloo tikki be air fried?
You can cook it that way, but the crust is drier and less satisfying because there is no fat in contact with the surface. Brush the tikkis with oil and cook at 200C for about 15 minutes, turning once. Shallow frying in two or three tablespoons of oil gives a much better result for little extra fat.
