How the two courses really differ
Gym Instructor is about the floor and the individual member. The course teaches safe set-up and use of cardio and resistance equipment, how to coach and correct fundamental lifts and machine exercises, the muscles and joints behind them, and how to run an induction for someone new. It also covers floor safety, responding to incidents, and simple workout plans for beginners. Of the pair it is the entry-level course, and it needs no prior qualification.
Group Fitness Instructor is about a room full of people moving at once. Its topics are class design from warm-up to cool-down, verbal, visual and tactile cueing for a group of mixed ability, functional circuits with bodyweight, bands and minimal equipment, and the use of tempo and pacing to hold a class's energy. It teaches regressions and progressions so that everyone can take part safely, and how to manage numbers and newcomers. It sits at intermediate level, and its guidance says some exercise familiarity helps.
So the skill being trained is different, not just the setting. A gym instructor needs to see a member's form and correct it. A group instructor needs to plan a session in advance, cue it clearly and keep people of mixed ability safely included. Neither course goes far into nutrition: Group Fitness Instructor touches it only lightly by its own account, and Gym Instructor does not list it among its topics.

Gym Instructor first is the sensible order: it is the beginner course, and it supplies the exercise familiarity that Group Fitness Instructor, an intermediate course, says is helpful. Group Fitness Instructor then adds class teaching, which is how its course page describes gym staff using it. Someone who already has exercise experience and only wants to teach classes can take Group Fitness Instructor alone.
The short answer
For the gym floor, or if you are a beginner, take Gym Instructor. For leading classes, if you already have some exercise familiarity, take Group Fitness Instructor. If you want both floor work and class work, take them in that order.
