Because it is curd, many people assume it is the healthy end of the sweet box. The truth is more mixed. Mishti doi keeps some of the benefits of fermented milk, but the way it is made moves it firmly into dessert territory. This page gives the real numbers and the practical choices.
What is mishti doi, and how is it different from plain curd?
Mishti doi is sweetened milk that is reduced, set with a starter and fermented, usually in an earthen pot. Plain dahi is simply milk set with a starter. For mishti doi, the milk, often full-fat and sometimes buffalo milk, is boiled and reduced by roughly a quarter to a third, which concentrates its fat, protein and milk sugar. Sugar is added, part of it caramelised first for the brown colour and toasted flavour, or replaced with khejur or nolen gur in winter. The mixture is cooled until lukewarm, a spoon of the previous batch is stirred in, and the pots are left overnight to set. The result is thicker, sweeter and far richer than ordinary curd.
How many calories are in mishti doi?
Roughly 130 to 200 kcal per 100 g. The range is wide because sweet shops and home cooks differ in how far they reduce the milk, whether they use full-fat or toned milk, and how much sugar goes in. Plain curd set from toned milk is roughly 60 to 70 kcal per 100 g, so mishti doi carries about two to three times the energy. A small clay bhaar from a sweet shop commonly holds around 100 g, while the larger pots bought for guests hold 500 g or more and are served in generous spoonfuls. Packaged mishti doi prints its own figure on the label, which is the most reliable number you will get for that brand.
How much sugar does a pot of mishti doi contain?
Typically 12 to 18 g of added sugar in 100 g, roughly three to four teaspoons, on top of the natural milk sugar. That is an estimate from standard recipes, since sweet shops do not publish their proportions. The WHO advises keeping free sugars below 10 per cent of daily energy and suggests further benefit below 5 per cent. On a 2,000 kcal diet, those limits are 50 g and 25 g of sugar a day. A single 100 g pot can therefore use up a third of the higher limit and more than half of the lower one. The sugar is also what makes mishti doi so easy to eat quickly, because sweetness masks how rich the reduced milk is.
Where the calories come from: reduced milk and caramel
About half of the energy comes from the milk and half from the sugar, though the split shifts with the recipe. Reducing milk removes water, not nutrients, so every spoon of mishti doi holds more milk fat and protein than the same spoon of plain milk curd. Full-fat or buffalo milk pushes the fat to the top of the range. Caramelising sugar changes its colour and flavour but not its calories; brown sugar syrup and white sugar provide the same energy per gram. Does mishti doi have probiotics?
It usually contains live bacteria, but calling it a probiotic claims more than anyone can show. A 2014 expert consensus statement defined probiotics as live microorganisms that, when given in adequate amounts, provide a health benefit. Mishti doi from a sweet shop is set with a starter carried from batch to batch, so the strains and their numbers are unknown and vary with the milk, the weather and the setting time. Some packaged products may be heat-treated after setting to extend shelf life, which kills most live cultures, and labels do not always say so. Mishti doi is a fermented food, and that has some value, but it is not a measured dose of a tested organism.
Is mishti doi good for digestion?
A small serving is easy for most people to digest, but the sugar and fat work against any gut benefit in larger amounts. Fermentation breaks down part of the lactose and partly digests milk protein, which is why curd tends to sit more comfortably than milk. A 2017 review of fermented foods concluded that they may help through their microbes and the compounds fermentation produces, but that controlled human trials are still limited for most foods. A large pot of mishti doi after a heavy biryani lunch is more likely to cause discomfort than to settle the stomach. People who want a daily fermented food for gut health are better served by plain curd or a glass of buttermilk.
Can people with lactose intolerance eat mishti doi?
Many can manage a small portion, but it depends on the person and on the pot. Live yoghurt cultures digest lactose, and in 2010 the European Food Safety Authority accepted that live cultures of the two standard yoghurt bacteria improve lactose digestion in people who digest it poorly. Mishti doi uses undefined home starters and is made from reduced milk, which starts with more lactose per spoon than ordinary milk. So some people who tolerate plain curd will still feel bloated after a large serving of mishti doi. Try two or three tablespoons after a meal before assuming it is safe. What the research on fermented dairy does and does not show
The studies are encouraging for plain fermented dairy and silent on sweet desserts. A 2014 analysis of three large American cohorts, combined with a meta-analysis of 14 cohort studies, found that total dairy intake was not linked with type 2 diabetes risk, while each daily serving of yoghurt was associated with an 18 per cent lower risk. These were observational studies in Western populations, where yoghurt is often unsweetened or lightly sweetened, and they cannot prove cause. None tested mishti doi. It would be a stretch to take a finding about plain yoghurt and apply it to a dessert with three to four teaspoons of added sugar in every 100 g. The benefit, if real, belongs to the curd.
Is mishti doi healthier than rasgulla or sandesh?
Serving for serving, it is broadly similar, with a slight edge in protein and calcium. A rasgulla is roughly 100 to 140 kcal a piece, most of it from the syrup, and a small sandesh of about 30 g is roughly 80 to 120 kcal. A 100 g pot of mishti doi sits at 130 to 200 kcal, so it is often the larger serving rather than the lighter sweet. Why the earthen pot matters, and why it does not make the doi healthier
The clay bhaar is part of the texture. Unglazed clay is porous, so it draws some whey out of the setting curd and lets moisture evaporate, which is why sweet-shop mishti doi is so firm and has a slightly concentrated top layer. Clay also holds warmth evenly overnight, which helps the culture set in the cooler months. None of this adds nutrients or removes sugar. Claims that earthen pots add minerals or balance acidity have little to support them in any meaningful amount. The pot deserves credit for flavour and texture. Pots that are cracked or reused many times can harbour contamination, so a clean, single-use bhaar from a busy shop is the sensible choice.
Can diabetics eat mishti doi?
Occasionally, in a small portion eaten after a meal, if blood sugar is otherwise under control. The added sugar is the concern: 100 g carries roughly 12 to 18 g on top of the milk's own lactose. Two to three tablespoons, about 50 g, at the end of a lunch with vegetables and protein will affect blood sugar far less than a full pot eaten on its own in the afternoon. Checking blood sugar two hours later shows how your body handles it. Is mishti doi good for weight loss?
Not as a regular food, though it can fit into a weight loss plan as an occasional dessert. A 2012 BMJ meta-analysis found that cutting sugar was associated with weight loss of about 0.8 kg in trials, and that the effect came through the calories sugar adds rather than anything special about sugar itself. That is the right way to think about mishti doi. At 130 to 200 kcal per 100 g, a pot a day adds up to a meaningful surplus over a month. A few tablespoons on a festive occasion will not undo progress. People who love the flavour sometimes do well with plain curd and a teaspoon of nolen gur stirred in, which gives the taste with less sugar.
Packaged or sweet-shop mishti doi: reading the label
Packaged mishti doi has one real advantage: a nutrition panel. It lists energy, protein, carbohydrate, sugars and fat per 100 g, and sometimes per cup, so you know what you are eating rather than guessing. Look at the sugars line, check whether the cup is 80 g, 100 g or more, and see whether the ingredient list mentions live or active cultures. Some brands add milk solids, stabilisers or thickeners to mimic the firm set of traditional doi. Sweet-shop mishti doi has no panel, so the estimates on this page are the best guide. In either case, check the use-by date and keep it refrigerated, since a sweet, set milk product spoils quickly in warm weather.
Making it at home with less sugar
Home mishti doi lets you control both the milk and the sugar. Toned milk reduced by a quarter still sets firmly and lowers the fat, and a third less sugar than most recipes use is rarely noticed if part of it is properly caramelised, because the toasted flavour reads as sweetness. Set it in small katoris or single-portion clay pots rather than a large bowl, so a serving is defined before anyone reaches for a spoon. A lighter homemade mishti doi
Choose toned milk and reduce it
Simmer toned milk until it has reduced by about a quarter. It still sets firmly with less fat than full-fat milk.
Caramelise part of a smaller amount of sugar
Use about a third less sugar than usual and caramelise some of it; the toasted flavour makes up for the missing sweetness.
Cool to lukewarm before adding the starter
Milk that is too hot kills the culture. It should feel warm, not hot, on the back of a finger.
Set in single-serving pots
Small katoris or bhaars fix the portion before anyone starts eating.
Refrigerate once set
Chill it as soon as it sets firm so it does not turn sour or spoil.

The short version on mishti doi
Mishti doi is a dessert that happens to be fermented, not a health food that happens to be sweet. Per 100 g it has roughly 130 to 200 kcal and 12 to 18 g of added sugar, along with 4 to 5 g of protein and a useful amount of calcium. It may contain live bacteria, but it cannot fairly be called a probiotic. Eat it in small portions, after a meal, on occasions that deserve it. For daily fermented dairy, choose plain curd or buttermilk. With diabetes, keep to a few tablespoons and check your sugar afterwards, and make the rest of the day's meals plainer.
