Maida has been blamed for everything from diabetes to sticking inside the intestines. Most of those claims are false, and the real case against it is quieter: what milling takes out, and what maida usually arrives with.

Is Maida Bad for Health? What Refined Flour Does and Does Not Do

Maida is the fine white flour behind naan, bhatura, samosa pastry, rumali roti, pav, white bread, biscuits, cakes, momos and most instant noodles. Somewhere along the way it picked up a reputation as slow poison, and forwarded messages now claim it is bleached with a chemical that causes diabetes and that it clings to the gut like glue.

The truth is less dramatic and more useful. Maida is ordinary wheat with its most nutritious parts milled away. This page explains what that costs you, which frightening claims are false, and how much maida a sensible diet can hold.

What is maida made from?

Maida is made from wheat. Millers separate the grain into three parts: the bran (the fibrous outer layer), the germ (the small, oily embryo) and the endosperm (the starchy bulk). Maida is the endosperm alone, ground very fine. Atta is ground from the whole grain, which is why it is darker, coarser and heavier. Rava or sooji is also milled from the endosperm, only more coarsely, so swapping maida for sooji changes a dish's texture far more than its nutrition. Maida's whiteness comes from losing the bran, helped by natural ageing of the flour and, in some mills, a permitted bleaching agent.

What does refining take out of the flour?

Most of the fibre and a good share of the micronutrients. Whole-wheat flour has about 10 to 11 g of fibre per 100 g, while refined flour has about 3 g (USDA FoodData Central). The bran and germ also hold much of the grain's magnesium, zinc, iron, vitamin E and B vitamins such as thiamine, niacin and folate, so maida carries noticeably less of each. Calories barely change: both flours give roughly 340 to 365 kcal per 100 g, and protein is only slightly lower in maida. Some maida is fortified with iron, folic acid and vitamin B12 under FSSAI's fortification standards, and those packs carry the +F mark.

Does maida contain gluten?

Yes. Maida is wheat, and gluten is the protein network that forms when wheat flour meets water. Its ability to develop stretchy gluten is exactly why bakers choose it for bread, naan and pizza bases. Anyone with coeliac disease or a wheat allergy must avoid maida as strictly as atta, and the word refined on a label does not mean the gluten has gone. People who suspect gluten is a problem should be tested before cutting it out, because removing it first makes the test unreliable. Is maida bleached with alloxan, and does that cause diabetes?

No. Alloxan is not used as a flour bleach, and the viral claim that alloxan bleaching makes maida diabetogenic is false. Alloxan is a laboratory chemical that researchers inject into rats and mice, at high doses, to destroy insulin-producing cells and create diabetic animals for experiments; that lab use is where the rumour began. FSSAI permits only listed flour treatment agents, such as a small, capped amount of benzoyl peroxide, and alloxan is not one of them. Type 2 diabetes is driven by excess weight, inactivity, genes and overall diet quality, not by a hidden chemical in the flour bin.

Does eating a lot of maida raise diabetes risk at all?

Indirectly, through the kind of diet it builds, yes. Diets low in whole grains and cereal fibre are consistently linked with higher rates of type 2 diabetes in large observational studies, and the multi-country PURE study, whose participants included many people in India, associated very high refined-grain intake with more cardiovascular disease and deaths. The mechanism is unexciting. Refined flour is easy to overeat, brings little fibre to slow digestion, and usually comes wrapped in fat and sugar. The person at risk is the one eating maida snacks daily with little dal or whole grain, not someone who has a naan on a Saturday.

Does maida have a higher glycaemic index than atta?

A little, in most comparisons, but the gap is smaller than people expect. International GI tables list white wheat bread and finely milled whole-wheat bread at similar values, because grinding whole wheat very fine erases much of the advantage the bran gives. Bigger differences in blood-glucose response come from fibre per portion, the amount eaten, the fat and sugar in the recipe, and what else is on the plate. Does maida stick to the intestines?

No. The picture of maida coating the gut like glue comes from what flour and water do in a mixing bowl and has nothing to do with digestion. In the body, enzymes in saliva and the small intestine break maida's starch down into glucose, which is absorbed like any other carbohydrate, and no sticky residue is left lining the intestine. What is true is that a low-fibre diet, which a maida-heavy diet usually is, produces smaller, harder stools and can lead to constipation. That is a fibre shortage rather than an adhesive, and it is fixed by adding fibre, not by fearing flour.

Which everyday foods are made with maida?

More than most people realise. Naan, kulcha, bhatura, rumali roti, samosa and kachori pastry, mathri, puffs, white bread, pav, burger buns, pizza bases, momos, most biscuits, rusks, cakes, cookies and many noodles are made mainly from refined flour. Some brown breads contain more maida than whole wheat and owe their colour to caramel, so the ingredients list matters more than the shade of the loaf. Ingredients are listed in order of weight, so the first one named is the main one. Instant noodles are a common daily source, and calories in Maggi shows what a packet adds up to.

Is the problem the maida or the frying?

Often it is the frying, the sugar and the portion. Most of a samosa's calories come from the oil it soaks up in the kadhai and the potato filling rather than the thin shell of pastry. A biscuit is maida bound with sugar and fat, frequently palm oil, and a bakery puff is layer upon layer of maida and shortening. Judge the whole food and not just the flour: a thin rumali roti is a modest food and a deep-fried bhatura a heavy one, though both are refined wheat. Frequency then decides whether any of it matters for your health.

How often can you eat maida and stay healthy?

Occasionally is fine for most people: a naan at a restaurant dinner, a samosa at a family gathering, a slice of birthday cake. The trouble is daily, repeated eating, where maida breakfasts, biscuits with every cup of tea, noodles for dinner and bakery snacks in between quietly replace the whole grains, dal, vegetables and fruit that supply fibre. As a working rule, make most of your grains whole: atta rotis, millets, oats, dalia and whole pulses. Track fibre rather than obsessing over one flour. What can you use instead of maida?

In most home recipes, part or all of the maida can go. Cakes, muffins and cookies usually work with half atta and half maida, and many work with all atta if you accept a denser crumb. Whole-wheat pasta and whole-wheat or millet noodles replace the refined versions directly. Ragi, jowar and oat flours suit pancakes, cheelas and some cookies. For everyday flatbreads, a multigrain roti is an easy default. Naan and bhatura are harder, because they depend on maida's gluten for their texture, so those are better kept as occasional treats than reinvented.

Taking maida out of a recipe

Some swaps are free, some cost you texture, and one or two are not worth attempting at all.

  1. Start at half and half

    Cakes, muffins and cookies usually work with half atta and half maida, and most people cannot tell.

  2. Go further where a denser crumb is fine

    Many of the same bakes work with all atta once you accept the heavier texture that comes with it.

  3. Swap pasta and noodles outright

    Whole-wheat pasta and whole-wheat or millet noodles replace the refined versions with no adjustment to the recipe.

  4. Use other flours where texture allows

    Ragi, jowar and oat flours suit pancakes, cheelas and some cookies, and a multigrain roti makes an easy everyday default.

  5. Leave naan and bhatura alone

    Both lean on maida's gluten for what they are, so they are better kept as occasional treats than reinvented.

Should children avoid maida?

No, but it should not form the backbone of their diet. Children are heavy consumers of maida foods such as biscuits, packaged cakes, noodles and bakery snacks, and those can crowd out the whole grains, pulses, milk, fruit and vegetables that growing bodies need. An occasional pizza or birthday cake is no cause for concern. A child eating biscuits for breakfast and noodles for dinner most days gets too little fibre and too much sugar, fat and salt. If a child has ongoing tummy pain, loose stools or poor growth, the paediatrician is the first stop, not a change of flour.

Maida questions come up constantly for anyone who bakes, sells baked goods, or advises people who love them. The short answer

Maida is refined wheat: much the same starch as atta without most of the fibre, vitamins and minerals. It contains gluten, it is not bleached with alloxan, and it does not glue itself to your gut. Its real cost lies in what it displaces from the plate and what it comes wrapped in. Keep naan, samosa and cake as occasional foods, make most of your grains whole, and the flour stops being a health question.
