Assamese Khar (Alkaline Raw Papaya & Lentil Dish)

Khar is an Assamese main course, and also the name of its defining ingredient: a filtered alkaline water traditionally made from banana-peel ash, simmered here with raw papaya and moong dal (split yellow lentils). Ingredients

  • 250g raw (green) papaya, peeled, deseeded and cubed
  • 100g split yellow moong dal, lightly dry-roasted
  • 1/4 teaspoon food-grade sodium bicarbonate dissolved in 500ml water (a safe modern substitute for filtered banana-peel-ash water, or kolakhar)
  • 2 tablespoons mustard oil
  • 1 small onion, thinly sliced
  • 4 cloves garlic, crushed
  • 1-inch piece ginger, crushed
  • 2-3 green chillies, slit lengthways
  • Salt, to taste
  • Fresh coriander leaves, chopped, to finish

Cooking with a mild alkaline agent is a distinctive regional technique rather than a health intervention, and using a measured pinch of food-grade sodium bicarbonate keeps the process safe and controllable at home.

Method

    Heat the mustard oil in a heavy-bottomed kadhai until it just begins to smoke, then lower the heat.

    Add the sliced onion and sauté for 2-3 minutes until softened and translucent.

    Stir in the crushed garlic, ginger and slit green chillies, and cook for a minute until fragrant.

    Add the roasted moong dal and stir for two minutes to coat it in the oil.

    Add the papaya cubes and stir well to combine.

    Pour in the bicarbonate solution (or filtered kolakhar), adding a little plain water if needed to just cover the vegetables.

    Cover and simmer on low heat for 20-25 minutes, stirring occasionally, until the papaya and dal are completely soft.

    Season with salt, then lightly mash with the back of the ladle so the dish takes on a loose, semi-thick texture.

    Simmer uncovered for a further 5 minutes, scatter over the coriander, and serve hot as the first course of the meal.

Khar holds an unusual place in Indian cooking: in a traditional Assamese meal it is served first, ahead of the rice-and-fish courses that follow, rather than alongside them. The name refers both to the finished dish and to the alkaline water at its heart, historically obtained by burning sun-dried banana peel or plantain trunk to ash and filtering water through it. That practice of extracting an alkali from plant ash is one of the oldest food-processing techniques in the region, predating refrigeration and modern preservation by generations.

The most common mistake outside Assam is over-concentrating the alkaline element, which turns the dish bitter and soapy rather than subtly savoury; the quantities above are calibrated to be gentle. Traditional kolakhar is prepared by filtering water through banana-peel ash several times and is used in very small, practised amounts by Assamese home cooks, but replicating that safely without local guidance is difficult, so a measured pinch of food-grade sodium bicarbonate is the sensible substitute for a home kitchen.

Family versions vary widely: some cooks add a piece of fish head or dried fish for a non-vegetarian khar, while others swap the papaya for taro (kosu) or the sour elephant apple (ou tenga) depending on the season. This lentil-and-papaya version keeps the dish fully plant-based while staying true to its defining alkaline character.
