How the two courses really differ

Food Science & FSSAI is about keeping food safe and stable on its way to the person who eats it. It explains why food spoils and how it is preserved, what safe handling, storage and preparation look like, how additives and packaging keep a product stable, and what basic quality control involves. It then covers the role of FSSAI, what food businesses in India must comply with, and how to read and create a compliant label with nutrition and ingredient information.

Culinary Nutrition (Nutrition Chef) is about the dish itself. It teaches cooking methods that keep more of a food's vitamins and minerals, ways to cut excess oil, sugar and salt from everyday Indian recipes, swaps to wholegrains, millets and better fats, balanced plate design, menu planning for clients or an outlet, and presentation. Its audience is wider than business owners: home cooks, chefs, and nutritionists and dietitians who want their advice to become recipes are all named.

The levels differ. Food Science & FSSAI is a foundation course that needs no prior experience. Culinary Nutrition (Nutrition Chef) is intermediate, though it starts from the skills of a home kitchen. A caution on the name: Food Science & FSSAI teaches what the regulator requires and how compliance works. It does not register a business or obtain a licence on its behalf.
