Paniyaram
Paniyaram is a South Indian dish of fermented rice and urad dal batter cooked in a special dimpled pan into small round balls, crisp outside and soft inside. It can be savoury, with a tempering and onion folded through, or sweet with jaggery, and it is the standard way to use up dosa batter that has turned too sour.

Ingredients
- 3 cups fermented dosa or idli batter, preferably a few days old
- 1 onion, finely chopped
- 1 carrot, finely grated, optional
- 2 green chillies, finely chopped
- 1 inch ginger, grated
- 2 tablespoons oil, plus more for the pan
- 1 teaspoon mustard seeds
- 1 tablespoon urad dal and 1 tablespoon chana dal
- 10 curry leaves, chopped
- A pinch of asafoetida
- Salt to taste

Because it is cooked in a dimpled pan with a few drops of oil in each hollow rather than deep fried, paniyaram gives a fried-snack texture at a fraction of the fat. The batter is fermented, which reduces phytic acid and improves iron and zinc absorption, and the rice and urad dal combination supplies complementary amino acids. For children it is a genuinely good alternative to fried snacks.
Method

Heat 2 tablespoons of oil, pop the mustard seeds, then fry the urad and chana dal until golden.

Add the curry leaves, asafoetida, chillies, ginger and onion and cook for 4 minutes until the onion softens.

Fold this tempering, with the grated carrot if using, into the batter along with salt. Do not beat it, which would knock out the fermentation gas.

Heat the paniyaram pan on a medium flame until a drop of batter sizzles on contact. A cold pan is the reason paniyaram sticks.

Put a few drops of oil in each hollow and fill each about three quarters full with batter.

Cover and cook for 3 minutes until the base is golden and the top has set.

Turn each ball with a skewer or spoon handle and cook the other side for 2 minutes, uncovered, until evenly browned.

Why is sour batter better for paniyaram?
Because the sourness is an asset here rather than a fault. Batter that has fermented for three or four days is too tangy for a good dosa and too slack for a good idli, but in paniyaram the tang is balanced by the onion, chilli and tempering, and the extra fermentation gives a lighter interior. Every South Indian household has a point in the batter's life where it stops being dosa batter and becomes paniyaram batter, and this is it.
Why must the pan be hot before the batter goes in?
Because a cold cast iron surface lets the batter bond to the metal as it heats, and the ball tears when you try to turn it. A properly hot pan sets the outside on contact and the ball releases cleanly. Test with a single drop of batter: it should sizzle immediately. This is the single most common cause of paniyaram sticking, ahead of insufficient oil.
How much oil does each hollow need?
A few drops, not a spoonful. The pan is designed so that a small quantity of oil pools at the bottom of each dimple and effectively shallow fries the base while the top steams under the lid. More oil than that makes them greasy without making them crisper. This is why paniyaram is such a good alternative to fried snacks: the shape does most of the work that deep frying would otherwise do.
Should the batter be beaten before adding the tempering?
No. The fermentation has filled the batter with carbon dioxide, and that gas is what makes the interior light. Beating or vigorous stirring knocks it out and gives dense, heavy paniyaram. Fold the tempering through with a light hand, just enough to distribute it. The same rule applies to idli batter.
What is the sweet version?
Sweet paniyaram replaces the tempering with jaggery, grated coconut and cardamom folded into the same batter, sometimes with a little mashed banana. It is cooked identically. In some households a mixture of rice flour and jaggery is used instead of dosa batter, giving a denser result closer to a fritter. Both are common at festivals and as an after-school snack for children.
Is it a good snack for children?
One of the better ones. It has the round, poppable format that children like, it is fermented so the minerals are more available, and it uses a fraction of the oil a fried snack would. Grated carrot, beetroot or finely chopped spinach can be hidden in the batter without much protest. Keeping the green chilli out and using only ginger makes it suitable for younger children. Can it be made without the special pan?
Not really, and this is the one dish where the equipment is not optional. The dimpled pan creates the shape and controls the oil, and there is no good substitute. An aebleskiver pan, sold for the Danish pancake of that name, is essentially the same object and works perfectly. Trying to make paniyaram on a flat tawa gives you small thick pancakes, which are fine but are not paniyaram.

Can I use fresh dosa batter for paniyaram?
You can, but slightly sour batter that is two or three days old is better. The extra fermentation gives a lighter interior and a tang that the onion and tempering balance well. Fresh batter makes a blander, denser paniyaram. This is why it is traditionally the way households use up batter past its best.
