Chingri Malai Curry

Chingri malai curry is a Bengali dish of prawns in a mildly spiced coconut milk gravy, scented with whole warm spices and finished with ghee. Two things decide it: prawns that spend barely three minutes in the pan, and coconut milk that is never allowed to reach a rolling boil.

Ingredients

  • 500 g large prawns, shelled and deveined
  • 1 cup thick coconut milk and 1/2 cup thin coconut milk
  • 1 large onion, ground to a smooth paste
  • 1 tablespoon ginger paste
  • 1/2 teaspoon turmeric and 1 teaspoon red chilli powder
  • 2 green chillies, slit lengthwise
  • 2 tablespoons mustard oil and 1 tablespoon ghee
  • 1 bay leaf, 2 green cardamom pods and a 1 inch piece of cinnamon
  • 1/2 teaspoon sugar and salt to taste

Prawns are a lean protein, carrying roughly 20 g per 100 g with very little fat, along with selenium, iodine and vitamin B12. Almost all the energy in the finished dish comes from the coconut milk and the ghee, both rich in saturated fat, so using second-extract coconut milk or a thinner gravy changes the picture considerably. Prawns do carry a fair amount of dietary cholesterol, which is worth knowing if a clinician has asked you to watch it, though their own saturated fat content is low.

Method

    Check that the prawns smell clean and of the sea and nothing sharper than that, then shell, devein and rinse them. Pat dry and rub with a little turmeric and salt.

    Heat the mustard oil until it just begins to smoke, drop the flame, and fry the prawns for about a minute on each side until they turn pink. Lift them out at once.

    Into the same oil put the bay leaf, cardamom and cinnamon, and let them swell for a few seconds.

    Add the onion paste and cook over a medium flame until it loses its raw smell and turns pale gold, roughly eight minutes.

    Stir in the ginger paste, turmeric, chilli powder, sugar and salt, then pour in the thin coconut milk and simmer for five minutes.

    Turn the flame right down, add the thick coconut milk and the slit chillies, and return the prawns. Give them three minutes and no more, never letting the pan boil.

    Stir the ghee in off the heat, cover, and rest for five minutes before serving with plain rice.

Why are the prawns fried and then lifted out?

A prawn is cooked through in about three minutes in total, and everything past that turns it rubbery. The brief fry sets the surface, gives a little colour and flavours the oil, after which the prawns wait on a plate while the gravy is built. They go back only at the end, for long enough to finish and no longer. A prawn left in the pan through the whole simmer comes out tough, and it leaks liquid that thins the gravy on the way.

How do you tell a prawn is done?

It curls into a loose C shape and turns opaque with pink edges. One that has pulled itself into a tight O has gone too far. If you are unsure, cut one open: the flesh should be evenly opaque with no grey, glassy core left in the middle. This matters for safety as much as for texture, because undercooked shellfish is a real risk, but the gap between safe and spoiled by overcooking is only a minute wide.

Why does coconut milk split?

Heat, and nothing else. Coconut milk is an emulsion of fat in water held together only loosely, and a hard boil breaks it, leaving oil on the surface and a grainy body underneath. Add the thick milk at the very end, keep the flame low enough that only an occasional bubble rises, and keep it moving. Simmering the spices in the thin milk first gives the gravy depth without putting the thick milk at risk.

Can tinned coconut milk be used?

Yes, and most kitchens do. Shake the tin before opening it, or if it has already separated, save the firm cream for the finish and let the watery part down with warm water for the first stage. Fresh coconut milk tastes sweeter and is worth the trouble when the coconut is good. Powder works at a pinch but gives a flatter result and can turn faintly chalky.

What makes this different from an everyday prawn curry?

Restraint. A prawn curry elsewhere in India carries a full base of garlic, ground coriander and often tamarind. This one uses onion and ginger only, whole warm spices and a pinch of sugar, so the sweetness of the shellfish and the coconut stay at the front, with mustard oil supplying the pungency that ground spice would otherwise provide. It belongs to the festive end of Bengali cooking rather than the daily end, where a thin macher jhol does the work.

Does it reheat?

Not well, and that is the honest answer for any prawn dish. It is safe in the fridge for a day, but warming it cooks the prawns a second time and they tighten noticeably. If you need to work ahead, take the gravy to the end of the thin coconut milk stage, cool it and chill it, then add the thick milk and the prawns just before eating. The genuine risk is cooked shellfish left standing at room temperature for hours, not the refrigerator. Why did my coconut milk gravy split?

It boiled. Coconut milk is a loose emulsion of fat in water, and a rolling boil breaks it so the oil rises and the body turns grainy. Add the thick coconut milk only at the end, over the lowest flame, and keep stirring so no part of the pan gets hot enough to bubble hard.

How long do prawns need to cook?

About three minutes in total. They are done when they turn opaque and curl into a loose C shape; a tight O means they are overcooked and will be rubbery. Cutting one open should show evenly opaque flesh with no glassy grey centre, which is also the check for safety.

Can I use frozen prawns for chingri malai curry?

Yes. Thaw them in the refrigerator rather than in warm water, drain them well and pat them thoroughly dry, because surface water will stop them colouring and will thin the gravy. Frozen prawns release more liquid than fresh ones, so fry them briefly over a high flame and lift them out promptly.
