Paneer Tikka

Paneer tikka is paneer marinated in spiced hung curd with capsicum and onion, skewered and cooked at high heat until charred at the edges. Traditionally it comes from a tandoor, but an oven grill, a hot tawa or an air fryer all work. Because it is grilled rather than simmered in a gravy, it is among the highest-protein and lowest-carbohydrate items on an Indian menu.

Ingredients

  • 300 g paneer, cut into 3 cm cubes
  • 1 cup thick curd, hung in muslin for 30 minutes
  • 1 large capsicum and 1 onion, cut into squares
  • 1 tablespoon ginger garlic paste
  • 2 tablespoons gram flour, dry roasted
  • 1 teaspoon Kashmiri red chilli powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon carom seeds, crushed
  • 1 tablespoon mustard oil
  • 1 tablespoon lemon juice
  • 1 teaspoon chaat masala, to finish
  • Salt to taste

A serving is close to pure protein and fat, with almost no carbohydrate beyond the vegetables. Paneer provides roughly 18 grams of protein per 100 grams, and hung curd adds a little more while supplying the acidity that keeps the cubes tender. This makes paneer tikka a genuinely useful post-workout or high-protein snack for vegetarians, in a cuisine where most snacks are fried and starch based.

Method

    Hang the curd in muslin for at least 30 minutes. A watery marinade slides off the paneer and is the main reason home tikka looks pale.

    Whisk the hung curd with the roasted gram flour, ginger garlic paste, chilli powder, garam masala, carom seeds, mustard oil, lemon juice and salt.

    Fold in the paneer, capsicum and onion so every piece is coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Thread onto skewers, alternating paneer and vegetables, leaving a small gap between pieces so heat circulates.

    For an oven, grill at 220C for 12 to 15 minutes, turning once. For a tawa, cook on a high flame with a teaspoon of oil, turning every 2 minutes. For an air fryer, 200C for 10 minutes.

    Brush with a little oil halfway through, which helps the edges char rather than dry out.

    Rest for 2 minutes, then finish with chaat masala and a squeeze of lemon.

Why must the curd be hung?

Because whey is water, and water is the enemy of a marinade that needs to cling and then char. Ordinary curd is roughly four fifths liquid, and that liquid runs off the paneer in the first minute of heat, taking the spices with it and steaming the surface instead of browning it. Draining it through muslin for half an hour removes most of the whey and leaves a thick paste that stays where you put it. This single step separates good home tikka from disappointing home tikka.

What is the gram flour for?

It binds and it browns. Dry roasted gram flour absorbs residual moisture in the marinade and gives it enough structure to form a crust, and its own proteins and starches brown readily at grilling temperature. Roasting it first is not optional; raw gram flour tastes chalky and slightly bitter, and two minutes in a dry pan until it smells nutty fixes that entirely.

Can you make paneer tikka without a tandoor?

Yes, and the three home methods differ mainly in how much char you get. An oven grill at its highest setting comes closest, because the radiant heat from above mimics the tandoor roof. An air fryer gives an even, drier result with less char but very little mess. A heavy tawa on a high flame gives the most char of all but only on the flat faces, so you get stripes rather than an even crust. All three work; none produces the smokiness of a real tandoor.

How do you add the smoky flavour?

The dhungar method, which takes two minutes. Put the cooked tikka in a bowl, place a small steel katori in the centre, and drop a piece of charcoal heated until glowing into it. Pour half a teaspoon of ghee onto the coal, and cover the bowl immediately for one minute. The smoke that fills the bowl settles on the paneer and gives the tandoor note that no oven produces. Uncover it after a minute or the flavour becomes acrid.

Is paneer tikka a good high-protein snack?

It is one of the best available in Indian vegetarian cooking. A 100 gram serving carries around 18 grams of protein with negligible carbohydrate, which is unusual in a cuisine where most snacks are fried starch. The fat content is real, since paneer is a full fat cheese, but it comes packaged with calcium and protein rather than alone. Why does paneer sometimes turn rubbery on the grill?

Overcooking, or paneer that was too firm to begin with. Fifteen minutes at high heat is the upper limit; beyond that the protein network tightens and squeezes out moisture. Vacuum packed supermarket paneer is pressed harder and starts drier, so it hits that point sooner. Cut cubes larger than you think you need, since a bigger piece keeps a soft centre while the surface chars, and take them off while they still give slightly when pressed.

What should be served alongside?

Mint chutney, sliced onion and lemon, and nothing heavy. Paneer tikka is dry and well spiced, so it wants acidity and freshness rather than another rich element. As a starter it needs no accompaniment at all beyond chutney. As a meal it works rolled into a roti with onions and chutney, which turns a snack into something balanced without adding a gravy.

What people ask about Paneer Tikka

Is paneer tikka good for weight loss?

It suits a controlled intake better than most Indian snacks because it is grilled rather than fried and carries almost no carbohydrate. The protein is filling and the portion is self-limiting. Paneer is still a full fat cheese, so the energy is not trivial, but as a swap for samosa, pakora or a fried starter it is a substantial improvement.

Can I make paneer tikka in an air fryer?

Yes, at 200C for about 10 minutes, turning once. The result is even and needs very little oil, though you get less char than an oven grill or a tawa gives. Brush the pieces lightly with oil halfway through so the surface crisps rather than dries. Do not crowd the basket; the pieces need space for air to circulate.

Why does my paneer tikka marinade slide off?

The curd was not hung, or gram flour was left out. Ordinary curd is mostly whey and runs off as soon as it meets heat. Drain it in muslin for at least thirty minutes and whisk in two tablespoons of dry roasted gram flour, which absorbs the remaining moisture and gives the marinade something to grip with.

How long should paneer be marinated?

Thirty minutes is the minimum and two hours is plenty. Unlike meat, paneer has no connective tissue to break down, so long marination adds little and the acid in the curd will eventually soften the surface to a mush. If you are preparing ahead, keep it refrigerated and no longer than four hours.

Is paneer tikka gluten free?

As written here, yes. Paneer, curd, gram flour and the spices contain no gluten. Check the chaat masala and any shop-bought tandoori masala, since some blends use wheat flour as an anti-caking agent, and avoid versions where the marinade is thickened with refined wheat flour rather than gram flour.
